- Grease a 9×13-inch baking dish. Tear the croissants into rough 2 to 3-inch pieces and arrange them evenly in the dish.
- Whisk the eggs, milk, cream, sugar, vanilla, cinnamon, and salt together until smooth and the sugar dissolves.
- Pour the custard over the croissants and press down gently with a spoon to help them absorb the liquid. Cover and refrigerate at least 30 minutes, preferably overnight (8 to 12 hours).
- Preheat the oven to 350°F (175°C). Let the dish sit at room temperature for 20 minutes, then bake uncovered for 40 to 45 minutes until golden and the center is set with no jiggle.
- Rest the casserole for 5 minutes. Dust with powdered sugar, cut into squares, and serve with warm maple syrup and fresh berries.
Notes
The total time assumes a quick 30-minute soak, but for the best texture, refrigerate overnight and add the 20-minute counter rest before baking. If the top browns too quickly, tent loosely with foil for the last 10 minutes of bake time.
