- Pat chicken dry, season with salt, garlic powder, paprika, and pepper, and let rest 10 minutes.
- Set up flour, beaten egg, and panko in separate bowls. Dredge each breast in flour, dip in egg, and press firmly into panko until thickly coated.
- Place breaded chicken on a wire rack set on a baking sheet. Spray both sides generously with cooking spray.
- Bake at 400°F (200°C) for 25 to 30 minutes, until deep golden and 165°F internally.
- Rest 5 minutes, then slice on a bias and serve hot.
Notes
If your chicken breasts are very large or uneven, pound them to a more consistent ¾-inch thickness before seasoning so they finish together. Resting after the bake matters more than it seems, it keeps the crust from tearing when you slice.
