Coconut Buttercream Frosting Recipe

Ingredients
  

  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 3 tbsp full-fat coconut milk
  • 1 tsp coconut extract
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. Beat the softened butter with a mixer on medium speed until smooth and pale, about 2 minutes.
  2. Add half the powdered sugar, the coconut milk, coconut extract, vanilla, and salt. Beat on low to combine, then increase to medium and beat for 1 minute. Add the remaining sugar and beat 1 more minute until creamy.
  3. Whip on high speed for 3 to 4 minutes, scraping the bowl once or twice, until the frosting is light, airy, and holds a stiff peak.
  4. Pipe or spread onto a cooled cake or cupcakes, and top with toasted coconut flakes if you like.

Notes

Make sure the butter is truly softened before you start, it’s the only way to get a lump-free, fluffy result. If making ahead, refrigerate in an airtight container, then bring to room temperature and re-whip until light before using.
