Classic White Sauce Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk, cold
  • ½ tsp fine sea salt
  • ¼ tsp white pepper
  • ⅛ tsp freshly grated nutmeg

Method
 

  1. Melt the butter in a small saucepan over medium heat. Whisk in the flour and cook, whisking constantly, until the mixture is bubbly and pale golden, about 2 minutes.
  2. Remove from heat. Slowly pour in about a third of the cold milk, whisking until smooth. Add the remaining milk in a steady stream while whisking. Return to medium heat, whisking constantly, and bring to a gentle boil until the sauce thickens enough to coat the back of a spoon, about 4 to 5 minutes.
  3. Reduce the heat to low and simmer for 2 minutes, whisking occasionally. Remove from heat, stir in the salt, white pepper, and nutmeg. Spoon over your dish right away.

Notes

A standard batch yields about 1 cup of sauce. For a thicker or thinner sauce, adjust the milk amount as described in the tips section. The sauce will set firm when chilled, so always reheat it with a splash of milk and low heat to restore its fluid texture.
