Classic Enchilada Sauce Recipe

Ingredients
  

  • 3 tbsp neutral oil
  • 3 tbsp all-purpose flour
  • 3 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • 2 tbsp tomato paste
  • 2 cups low-sodium vegetable or chicken broth
  • 1 tsp white vinegar or apple cider vinegar
  • Salt to taste

Method
 

  1. Whisk oil and flour in a saucepan over medium heat for 1 minute until pale golden.
  2. Stir in tomato paste and cook 30 seconds, then add chili powder, cumin, garlic powder, and oregano and stir another 30 seconds.
  3. Slowly whisk in broth, bring to a bubble, then reduce heat to low and simmer uncovered for 10 minutes until thickened.
  4. Remove from heat, stir in vinegar, and add salt to taste.

Notes

The sauce will thicken as it cools, so make it a touch looser than you want if using it later. A fresh batch develops even deeper flavor after a day in the fridge.
