- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment.
- Cream the butter and sugar until light and fluffy, about 2 minutes.
- Beat in the egg and vanilla until just combined.
- Gradually mix in the flour and salt until a dough forms, being careful not to overmix.
- Roll the dough to 1/4-inch thickness on a floured surface, cut into shapes, and place on the prepared sheets. For sharp edges, chill the cutouts on the sheet for 5 minutes in the freezer.
- Bake for 10 to 12 minutes until the edges are lightly golden. Cool on the sheet for 5 minutes, then transfer to a wire rack. Decorate once completely cooled.
Notes
For the best texture, make sure your butter is truly softened but not greasy or melted. If you plan to decorate with royal icing, you can bake the cookies a day ahead; the flavor actually improves overnight.
