Cast Iron Filet Mignon Recipe

Ingredients
  

  • 2 filet mignon steaks, 6 to 8 oz each, about 1.5 to 2 inches thick
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 tbsp vegetable oil
  • 2 tbsp unsalted butter
  • 2 garlic cloves, crushed
  • 2 to 3 sprigs fresh thyme or rosemary

Method
 

  1. Remove steaks from fridge 30 minutes ahead. Pat dry, season with salt and pepper, and heat a cast iron skillet over high heat.
  2. Add oil to the hot skillet, lay in steaks, and sear without moving for 3 minutes per side.
  3. Reduce heat to medium, add butter, garlic, and herbs. Tilt skillet and baste continuously for 1 to 2 minutes.
  4. Rest steaks on a cutting board 5 to 7 minutes, then slice against the grain and spoon pan butter over the top.

Notes

Letting the steaks sit at room temperature before cooking is optional but helps them cook more evenly. Resting after cooking is essential, so plan those 5 to 7 minutes into your timing.
