Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • 2 tsp lemon zest
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Method
 

  1. Beat the butter and sugar on medium speed until pale and fluffy, about 3 minutes.
  2. Mix in the egg, vanilla, and lemon zest on low speed just until combined.
  3. Whisk the flour, baking powder, and salt together, then add to the butter mixture and mix on low until a soft dough forms.
  4. Pat the dough into a flat disc, wrap in plastic, and chill at least 2 hours.
  5. Preheat oven to 350°F. Roll the dough to 1/4 inch thick, cut shapes, and bake on parchment-lined sheets for 10-12 minutes until edges are lightly golden.
  6. Cool completely on a wire rack, then decorate with icing and sprinkles.

Notes

Chilling the dough is not counted in the prep time, so plan ahead for that 2-hour rest. If you skip the icing, these are still a tender, buttery cookie that pairs well with tea.
