Method
- Beat the butter and sugar on medium speed until pale and fluffy, about 3 minutes.
- Mix in the egg, vanilla, and lemon zest on low speed just until combined.
- Whisk the flour, baking powder, and salt together, then add to the butter mixture and mix on low until a soft dough forms.
- Pat the dough into a flat disc, wrap in plastic, and chill at least 2 hours.
- Preheat oven to 350°F. Roll the dough to 1/4 inch thick, cut shapes, and bake on parchment-lined sheets for 10-12 minutes until edges are lightly golden.
- Cool completely on a wire rack, then decorate with icing and sprinkles.
Notes
Chilling the dough is not counted in the prep time, so plan ahead for that 2-hour rest. If you skip the icing, these are still a tender, buttery cookie that pairs well with tea.
