Buttery Scottish Shortbread Cookies Recipe

Ingredients
  

  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 cups all-purpose flour
  • ¼ teaspoon fine sea salt (optional, see note)

Method
 

  1. Heat oven to 325°F (160°C). Beat butter and sugar until pale and fluffy, about 3 minutes.
  2. Mix in flour and salt on low just until clumps form, about 30 seconds.
  3. Press dough into a 9-inch round tart tin, prick with a fork, and score into 8 wedges.
  4. Bake 35 to 40 minutes, rotating halfway, until pale golden and set in the centre.
  5. Cool 5 minutes, slice along scored lines while warm, dust with sugar, and cool completely on a rack.

Notes

The shortbread will firm up as it cools. For cleanest cuts, slice while still slightly warm. If you prefer thicker fingers, bake the dough in an 8-inch square tin and add 5 minutes to the time. Omit the salt when using salted butter.
