Ingredients

  • 3 cups self-rising flour
  • 1/2 cup cold unsalted butter
  • 1 1/4 cups cold buttermilk
  • 2 tbsp melted butter for brushing (optional)

Method

  1. Heat oven to 450°F (230°C). Work cold butter into the flour until the largest pieces are pea size.
  2. Stir in cold buttermilk until a shaggy, sticky dough forms.
  3. Pat into a 1-inch-thick rectangle, fold in thirds, turn, and repeat once.
  4. Cut straight down with a floured biscuit cutter, place rounds on a parchment-lined sheet, and bake 12 to 14 minutes until golden.
  5. Brush with melted butter and cool 2 minutes on the sheet before serving warm.

Notes

These biscuits are at their best right out of the oven, so time the bake to finish just as dinner is coming off the stove. For a soft-sided biscuit, place the rounds touching each other on the baking sheet.
