Method
- Pour the water and starter into the bread machine pan. Add the flour, sugar, and salt. Dot the butter in a corner.
- Select the “Dough” cycle and start. Check after 5 minutes; the dough should form a soft, slightly tacky ball.
- When the cycle finishes, unplug the machine and let the dough rise in the closed machine until doubled, 2 to 4 hours.
- Plug in and select the “Bake” cycle. Set for 60 minutes, or start the basic cycle. Bake until the loaf is deep golden and reads 190°F to 200°F inside.
- Cool in the pan for 10 minutes, then turn out onto a rack to cool completely before slicing.
Notes
The active rise time will add 2 to 4 hours depending on your starter strength and room temperature. That time is not included in the prep or cook numbers because it is hands-off. If your machine only has a single full cycle, just let it run after the rise; the loaf will still turn out well.
