Braised Red Cabbage with Apple and Red Wine Recipe

Ingredients
  

  • 1 medium red cabbage (about 2 lb), thinly sliced, core removed
  • 1 apple, peeled and chopped
  • 1 medium yellow onion, thinly sliced
  • 2 tbsp butter
  • 1 cinnamon stick
  • 1 bay leaf
  • 3 tbsp red wine vinegar
  • ΒΌ cup red wine
  • 2 tbsp brown sugar
  • 1 tsp salt
  • Freshly ground black pepper, to taste

Method
 

  1. Melt the butter in a large heavy pot over medium heat. Add the onion and cook 5 minutes until soft, then stir in the cinnamon stick and bay leaf for 1 minute.
  2. Add the sliced cabbage and 1 tsp salt. Cook, stirring often, for 8-10 minutes until the cabbage wilts and reduces.
  3. Stir in the apple, red wine vinegar, red wine, and brown sugar, mixing well.
  4. Cover, reduce heat to low, and braise for about 45 minutes, stirring once or twice, until the cabbage is very tender and the liquid is glossy.
  5. Remove the bay leaf and cinnamon stick. Adjust seasoning with salt, pepper, and a little more vinegar if needed. Spoon into a serving dish and serve warm.

Notes

The braising time can vary slightly depending on your stove and pot; just keep the heat low and check for tenderness. If you plan to make the cabbage ahead, it reheats beautifully and tastes even better the next day.
