Ingredients

  • 1 ½ lbs boneless skinless chicken thighs, cut into 1-inch pieces
  • ⅓ cup cornstarch
  • 1 large egg, beaten
  • ½ tsp garlic powder
  • Salt and pepper
  • Cooking spray
  • ½ cup fresh orange juice, plus 1 tbsp zest
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 3 tbsp granulated sugar
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp cornstarch mixed with 2 tbsp water

Method

  1. Toss chicken with egg, garlic powder, salt, and pepper; then coat with cornstarch.
  2. Preheat air fryer to 400°F. Arrange chicken in a single layer, spritz with oil, and air fry 12-15 minutes, flipping once, until crispy and cooked through.
  3. Meanwhile, combine orange juice, zest, soy sauce, vinegar, sugar, garlic, and ginger in a pot; bring to a simmer, stir in cornstarch slurry, and cook until thickened, about 2 minutes.
  4. Toss hot chicken with sauce until evenly coated.
  5. Serve immediately over rice, topped with scallions and sesame seeds.

Notes

The sauce can be made ahead and reheated. If you’re cooking in batches, keep finished chicken warm in a 200°F oven while you air fry the rest.
