Zucchini Salsa Recipe

Ingredients
  

  • 2 cups diced zucchini (about 2 medium)
  • ½ cup finely diced red onion
  • 1 to 2 jalapeño peppers, minced
  • ¼ cup chopped fresh cilantro
  • Juice of 1 large lime (about 2 tablespoons)
  • 1 clove garlic, minced
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground cumin

Method
 

  1. Dice the zucchini into ¼-inch cubes and finely dice the red onion.
  2. Whisk together the lime juice, garlic, salt, and cumin in a small bowl until the salt dissolves.
  3. Combine the zucchini, onion, jalapeño, and cilantro in a bowl, pour the dressing over, and toss. Let sit 5 minutes, then serve with chips.

Notes

If your zucchini is very large, scoop out the spongy center before dicing to keep the salsa from getting watery. This salsa is best eaten the day it’s made.
