Zucchini Pizza Boats Recipe

Ingredients
  

  • 4 medium zucchini
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp dried Italian seasoning
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella
  • ½ cup mini pepperoni
  • Fresh basil, for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Halve zucchini lengthwise and scoop out seeds, leaving ¼-inch-thick shells.
  2. Place shells on a baking sheet. Brush insides with olive oil and season with salt, pepper, and Italian seasoning. Bake 10 minutes.
  3. Remove from oven. Fill each shell with marinara, mozzarella, and pepperoni, dividing evenly.
  4. Bake 10 to 12 minutes more, then broil on high 2 to 3 minutes until cheese is bubbly and golden. Garnish with basil and serve hot.

Notes

If your zucchini are on the larger side, scoop out a bit more of the flesh and extend the first bake by a couple of minutes to release extra moisture. The boats are best eaten the day they’re made.
