Zero-Point Weight Watchers Taco Soup Recipe

Ingredients
  

  • 1 lb 99% lean ground chicken breast
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp low-sodium taco seasoning (or one 1 oz packet)
  • 1 can (15 oz) fat-free refried beans
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) fire-roasted diced tomatoes, undrained
  • 1 can (4 oz) diced green chiles
  • 2 cups low-sodium chicken broth
  • Optional toppings: fat-free Greek yogurt, chopped cilantro, jalapeño slices, crushed baked tortilla chips

Method
 

  1. In a large pot over medium-high heat, cook the ground chicken until no longer pink, about 5 minutes. Drain any excess liquid.
  2. Reduce heat to medium, add the onion and cook 3 minutes until soft. Stir in the garlic and taco seasoning, cook 30 seconds.
  3. Stir in the refried beans, black beans, diced tomatoes with their juices, green chiles, and chicken broth. Bring to a boil, then reduce heat and simmer uncovered for 10 minutes, stirring occasionally.
  4. Ladle into bowls and top with Greek yogurt, cilantro, jalapeño, and crushed tortilla chips if you like.

Notes

For a thicker soup, start with only 1½ cups broth and add more as needed. Taste after simmering and adjust salt or heat to your liking. Leftovers are even better the next day; add a little broth when reheating.
