Ingredients

  • Cooking spray
  • 1 medium onion, diced
  • 2 carrots, cut into thin half-moons
  • 2 ribs celery, sliced
  • 1 bell pepper, any color, diced
  • 3 cloves garlic, minced
  • 1 small head green cabbage, cored and thinly shredded (about 6 cups)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, with their juices
  • Salt and black pepper
  • Lemon wedges, for serving
  • Chopped fresh parsley or dill (optional)

Method

  1. Coat a large pot with cooking spray and set over medium heat. Add the onion, carrot, and celery with a pinch of salt. Cook 5 minutes until the onion is translucent.
  2. Stir in the cabbage, bell pepper, garlic, oregano, and thyme. Cook 2 to 3 minutes, until the cabbage starts to wilt and the garlic smells fragrant.
  3. Pour in the broth and tomatoes with their juices, then add the bay leaf. Bring to a boil, lower the heat to a simmer, cover, and cook 15 to 20 minutes until the cabbage is tender.
  4. Remove the bay leaf. Ladle the soup into bowls, squeeze a lemon wedge over each serving, and top with fresh herbs if you like.

Notes

For true zero WW points, keep the cooking spray and skip any added oil. This soup freezes well in airtight containers for up to 3 months; thaw and reheat gently on the stove.
