Yogurt Chicken Recipe

Ingredients
  

  • 1 cup plain whole milk yogurt
  • 3 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp turmeric
  • 1½ tsp kosher salt
  • ½ tsp black pepper
  • 1½ to 2 lbs boneless skinless chicken breasts or thighs

Method
 

  1. Whisk yogurt, lemon juice, olive oil, garlic, cumin, paprika, turmeric, salt, and pepper in a large bowl.
  2. Add chicken and coat completely. Cover and refrigerate 30 minutes to 24 hours.
  3. Preheat grill to medium-high (400°F (200°C)). Lift chicken from marinade, letting excess drip off, then grill 6–8 minutes per side until internal temp reaches 165°F (74°C).
  4. Rest 5 minutes, then slice against the grain and serve with lemon and extra salt.

Notes

Thicker cuts like bone-in thighs need longer on the grill, so go by temperature rather than time. If you want to cook indoors, a hot cast-iron skillet or a 400°F oven both work. The yogurt sugars can cause some blackening on the grill, so move the chicken to a cooler spot if the outside chars before the inside is done.
