Yellow Curry Chicken Recipe

Ingredients
  

  • 1½ lbs boneless skinless chicken thighs, cut into 1‑inch chunks
  • 2 tbsp vegetable oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 to 4 tbsp yellow curry paste
  • 1 can (13.5 oz) full‑fat coconut milk
  • 1 cup chicken broth
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 medium Yukon gold potatoes, peeled and cut into ½‑inch cubes
  • 1 large carrot, sliced into ¼‑inch rounds
  • ½ cup frozen peas
  • Salt, to taste
  • Cooked jasmine rice, chopped cilantro, and lime wedges for serving

Method
 

  1. Season chicken with salt. Heat oil in a large pot over medium‑high heat. Sear chicken in batches until browned, 3–4 minutes per batch. Remove to a plate.
  2. Reduce heat to medium, add onion, and cook until softened, 3 minutes. Stir in garlic and ginger, cook 1 minute. Add curry paste and stir until fragrant, about 30 seconds.
  3. Pour in coconut milk and broth, scraping up any browned bits. Add potatoes, carrot, and chicken. Bring to a boil, then reduce to a simmer. Cook until potatoes are tender, 15–20 minutes, stirring occasionally.
  4. Stir in peas and fish sauce, cook 2 minutes. Taste and adjust with salt or a pinch of sugar if needed.
  5. Serve over jasmine rice with cilantro and lime wedges.

Notes

If the sauce thickens too much, thin it with a splash of broth or water. The flavors deepen overnight, so this is a great make‑ahead meal.
