Winter Sugar Cookies Recipe

Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Powdered sugar, for dusting (optional)

Method
 

  1. Cream the butter and sugar together until light and fluffy, about 3 minutes.
  2. Beat in the egg, vanilla, and almond extract until just combined.
  3. Mix in the flour, baking powder, and salt on low speed until a dough forms.
  4. Divide dough into two discs, wrap, and refrigerate at least 1 hour.
  5. Preheat oven to 350°F (175°C). Roll dough 1/4 inch thick on a lightly floured surface and cut into shapes.
  6. Bake on parchment-lined sheets for 8 to 10 minutes, until edges are just golden. Cool on the sheet for 5 minutes, then transfer to a rack.
  7. Once fully cool, dust with powdered sugar if desired.

Notes

The dough must chill for at least 1 hour before rolling; that time is not included in the prep clock. If your kitchen is warm, slide the cut cookie shapes back into the fridge for 10 minutes before baking so they hold crisp edges.
