Whole Orange Cake Recipe

Ingredients
  

  • 1 large navel orange, scrubbed, ends trimmed, cut into chunks, seeds removed
  • 1 cup (200g) granulated sugar
  • 3 large eggs, room temperature
  • 1/2 cup (120ml) vegetable oil
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (55g) almond meal
  • 2 teaspoons baking powder
  • 1/4 teaspoon fine sea salt

Method
 

  1. Place orange chunks in a saucepan, cover with water, bring to a boil, then simmer for 20 to 25 minutes until very soft. Drain, cool slightly, and blend until smooth.
  2. Preheat oven to 350°F (180°C) and line a 9x5-inch loaf pan with parchment. In a large bowl, whisk eggs and sugar until pale and thick, about 2 minutes. Add oil and orange pulp, whisk until combined.
  3. Sift in flour, almond meal, baking powder, and salt. Fold gently with a spatula just until no dry streaks remain.
  4. Scrape batter into pan, smooth the top, and bake for 50 to 55 minutes until a skewer inserted in the center comes out clean. Tent with foil after 40 minutes if browning too fast.
  5. Cool in the pan for 10 minutes, lift out with parchment, and cool completely on a wire rack. Dust heavily with icing sugar and slice thickly to serve.

Notes

The cake keeps well at room temperature for 4 days. Boiling the orange is essential; it removes bitterness and softens the peel so it blends seamlessly into the batter. For the cleanest slices, slice the cake once fully cooled.
