White Turkey Chili Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 large poblano pepper, seeded and diced
  • 3 cloves garlic, minced
  • 1 lb lean ground turkey (93% lean)
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp chili powder
  • 2 (15-oz) cans cannellini beans, drained and rinsed
  • 1 (4-oz) can diced green chiles, undrained
  • 4 cups low-sodium chicken broth
  • ½ cup heavy cream
  • Salt and black pepper
  • Toppings: fresh cilantro, diced avocado, tortilla strips, shredded Monterey Jack, lime wedges

Method
 

  1. Heat the oil in a large Dutch oven over medium-high. Sauté the onion and poblano until softened, about 5 minutes.
  2. Add the ground turkey, breaking it up as it cooks. When no pink remains, stir in the garlic for the last minute.
  3. Sprinkle in the cumin, oregano, chili powder, salt, and pepper. Cook, stirring, for 1 minute until fragrant.
  4. Add the cannellini beans, green chiles, and broth. Bring to a boil, then reduce heat and simmer for 15 minutes, mashing some beans against the pot to thicken.
  5. Remove from heat and stir in the heavy cream. Taste and adjust seasoning.
  6. Ladle into bowls and top with cilantro, avocado, tortilla strips, cheese, and a squeeze of lime. Serve hot.

Notes

If you prefer a thicker chili, simmer uncovered an extra 5 minutes before stirring in the cream. A squeeze of lime juice right at the end brightens the whole pot, so don’t skip it.
