White Turkey Chili Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • ¾ tsp kosher salt
  • ½ tsp black pepper
  • 2 (4.5 oz) cans diced green chiles
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 4 oz cream cheese, cubed and softened
  • Fresh cilantro, jalapeño slices, and tortilla chips for serving

Method
 

  1. Heat oil in a large pot over medium-high. Sauté onion 3 minutes, add garlic 30 seconds, then add turkey and cook until no longer pink, about 5 minutes.
  2. Stir in cumin, oregano, salt, and pepper; toast 1 minute. Add green chiles, beans, and broth. Stir well.
  3. Bring to a boil, then reduce heat and simmer uncovered 15 to 20 minutes until slightly thickened.
  4. Remove from heat, stir in cream cheese until fully melted. Ladle into bowls and top with cilantro, jalapeño, and crushed chips.

Notes

This chili thickens as it cools. If making ahead, add a little extra broth when reheating to loosen it. The cream cheese melts smoothest when softened to room temperature first, so pull it out of the fridge when you start cooking.
