White Queso Dip Recipe

Ingredients
  

  • 8 oz white American cheese, chopped
  • ½ cup evaporated milk
  • 2 oz cream cheese, softened
  • 1 (4 oz) can diced green chiles, drained
  • 2 tbsp diced pickled jalapeños, plus more for garnish
  • ¼ tsp kosher salt, if needed
  • Chopped fresh cilantro, for serving

Method
 

  1. Place the white American cheese, cream cheese, and evaporated milk in a saucepan over low heat. Stir often until melted and smooth, 5 to 7 minutes.
  2. Stir in the green chiles and pickled jalapeños and heat through, about 2 minutes. Add a splash of milk if the dip is too thick, and salt to taste.
  3. Spoon the hot queso into a serving bowl. Top with cilantro and extra jalapeños, and serve warm with chips.

Notes

This dip is best served right away. If making ahead, reheat gently over low heat with a splash of milk. Leftovers keep in the fridge for up to 4 days.
