White Pepper Gravy Recipe

Ingredients
  

  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 2 cups whole milk, slightly warmed
  • 1 tsp white pepper
  • ½ tsp kosher salt

Method
 

  1. Melt butter in a medium saucepan over medium heat. Whisk in flour and cook, whisking constantly, for 2 to 3 minutes until the roux is smooth and smells nutty.
  2. Slowly pour in the warmed milk while whisking. Bring to a gentle simmer, then reduce heat to low. Cook, whisking often, for 5 to 7 minutes until the gravy thickens and coats the back of a spoon.
  3. Remove from heat. Stir in white pepper and salt. Taste and adjust, letting the pepper rest a moment before you season again. Serve hot.

Notes

The gravy will continue to thicken as it sits. If reheating, whisk in a splash of milk to bring back the silky texture.
