Ingredients

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 ¼ cups granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 4 oz white chocolate, melted and cooled slightly
  • 1 cup buttermilk, room temperature
  • 1 lb fresh strawberries, hulled and sliced
  • 2 tsp granulated sugar (for strawberries)
  • For the frosting:
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 4 oz white chocolate, melted and cooled
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Preheat oven to 350°F (175°C). Grease two 8-inch pans and line with parchment. Whisk flour, baking powder, baking soda, and salt in a bowl.
  2. Beat butter and sugar until fluffy, then add eggs one at a time, vanilla, and melted white chocolate.
  3. Alternate adding dry ingredients and buttermilk to the butter mixture, mixing just until combined. Divide batter between pans. Bake 25-28 minutes. Cool completely.
  4. Toss strawberries with sugar. Beat butter, powdered sugar, melted white chocolate, cream, vanilla, and salt for frosting. Spread frosting and strawberries between layers, then frost top and sides. Top with fresh strawberries.

Notes

Chill the assembled cake for 20 minutes before slicing for cleaner pieces. If the frosting feels too soft, refrigerate it for 10 minutes before using.
