Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 2 tsp vanilla extract
  • 1 1/4 cups all-purpose flour, spooned and leveled
  • 1 tbsp cornstarch
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1 cup white chocolate chips, plus a few extra for pressing on top

Method

  1. Stir melted butter, brown sugar, and granulated sugar in a large bowl until it looks like wet sand, about 1 minute.
  2. Whisk in the egg and vanilla until smooth and glossy, about 30 seconds.
  3. Add flour, cornstarch, baking soda, and salt to the bowl and stir until just a few streaks remain, about 30 seconds.
  4. Fold in the white chocolate chips until evenly distributed.
  5. Preheat oven to 350°F (175°C) and line two baking sheets with parchment. Scoop rounded tablespoons of dough 2 inches apart and bake 10 to 12 minutes until edges are golden and centers look slightly underdone.
  6. Let cookies cool on the sheet for 5 minutes, then transfer to a rack. Press extra chips on top while warm.

Notes

For a bakery look, press a few extra white chocolate chips onto each dough ball just before baking. The cookies keep in an airtight container at room temperature for up to 5 days.
