Method
- Heat oil in a large pot over medium heat. Add onion and cook 5 minutes until softened. Stir in garlic and green chiles; cook 1 minute.
- Add cumin, oregano, chili powder, salt, and pepper; stir 30 seconds. Add beans, broth, and chicken. Bring to a boil, then reduce to a simmer.
- Simmer, uncovered, for 15 to 20 minutes, stirring occasionally, until flavors meld and broth thickens slightly.
- Reduce heat to low. Stir in cream cheese and Monterey Jack until melted and smooth. Remove from heat, stir in lime juice. Ladle into bowls and top with cilantro, avocado, and tortilla strips. Serve hot.
Notes
If you’d like a thicker chili, mash a portion of the beans before adding them. Leftovers thicken as they cool; thin with a little broth when reheating.
