White Chicken Chili Recipe

Ingredients
  

  • 1 tbsp neutral oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 lbs boneless skinless chicken thighs
  • 1 tsp kosher salt, divided
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 2 (4 oz) cans diced green chiles
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 4 cups chicken broth
  • 4 oz cream cheese, softened
  • 1 lime, juiced
  • small handful fresh cilantro, for serving

Method
 

  1. Heat the 1 tbsp oil in a large pot over medium heat. Add the diced onion and 1/2 tsp salt, cook about 5 minutes until soft.
  2. Push the onion aside, add the chicken thighs in a single layer, and brown both sides about 7 minutes total. The chicken will not be cooked through yet.
  3. Stir in the garlic, cumin, oregano, and remaining 1/2 tsp salt. Cook 30 seconds, then add green chiles, beans, and 4 cups chicken broth. Bring to a boil, reduce to a gentle simmer, and cook uncovered 20 minutes until the chicken shreds easily.
  4. Shred the chicken in the pot with two forks. Stir in the cream cheese cubes until melted and smooth. Add the lime juice, ladle into bowls, and top with cilantro.

Notes

If you want a thicker chili, mash about 1/2 cup of the beans against the side of the pot before adding the broth. A diced jalapeƱo added with the onion will give the whole pot more heat.
