White Bean Hummus Recipe

Ingredients
  

  • 1 15-oz can cannellini beans, drained and rinsed
  • 2 tbsp well-stirred tahini
  • 2 tbsp fresh lemon juice
  • 1 small garlic clove
  • 2 tbsp extra-virgin olive oil, plus more for serving
  • 2 tbsp cold water
  • ½ tsp fine sea salt
  • ¼ tsp ground cumin (optional)

Method
 

  1. Combine the tahini and lemon juice in a food processor and process until pale and fluffy, about 30 seconds.
  2. Add the drained beans, garlic, salt, and cumin. Process 1 minute, scraping down the sides once.
  3. With the motor running, slowly stream in the olive oil, then the cold water. Blend until glossy and smooth, about 45 seconds.
  4. Transfer to a bowl, swirl with a spoon, and drizzle with olive oil. Finish with smoked paprika or sumac and serve.

Notes

A 15-oz can yields roughly 1½ cups of hummus. If you like it extra lemony, add the zest as well as the juice. The dip can be made a day ahead; the flavor deepens overnight.
