White Bean Chili Recipe

Ingredients
  

  • 2 (15 oz) cans white beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (4 oz) can diced green chiles
  • 1 tsp ground cumin
  • 1/2 tsp dried oregano
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • Juice of 1 lime
  • Salt and black pepper
  • Diced avocado, fresh cilantro, tortilla strips (optional toppings)

Method
 

  1. Heat oil in a large pot over medium heat. Sauté onion until soft, about 5 minutes. Add garlic and green chiles, cook 1 minute.
  2. Stir in cumin and oregano, cook 30 seconds. Add broth, scraping up any bits.
  3. Add beans, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered for 12 minutes.
  4. Remove from heat, stir in cream and lime juice. Ladle into bowls and top with avocado, cilantro, and lime wedges.

Notes

For a thicker chili, mash some of the beans against the pot before adding the cream. The chili will thicken more as it cools.
