Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg (optional)

Method

  1. Preheat oven to 375°F (190°C). Cream butter and sugar until light and fluffy, about 2 minutes.
  2. Beat in egg and vanilla until smooth.
  3. Whisk flour, baking powder, salt, and nutmeg together in a separate bowl.
  4. Gradually add dry ingredients to wet, mixing just until dough forms.
  5. Roll dough to 1/4 inch thick, cut out shapes, and place on parchment-lined sheets. Sprinkle tops with sugar.
  6. Bake 8 to 10 minutes until edges are barely golden. Cool on sheet 2 minutes, then transfer to a wire rack.

Notes

For the cleanest shapes, chill the dough about 1 hour before rolling. The cookies keep well for several days and freeze beautifully both baked and as raw dough.
