Ingredients

  • 4 crusty sandwich rolls
  • 1 lb thinly sliced deli roast beef
  • 8 slices provolone cheese
  • 3 tbsp unsalted butter, softened
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • Salt and black pepper

Method

  1. Melt 1 tbsp butter in a saucepan over medium heat. Add garlic and cook 30 seconds. Add beef broth and Worcestershire, bring to a simmer, and cook 5 minutes.
  2. Set broiler to high. Slice rolls, spread cut sides with remaining butter, and broil 1 to 2 minutes until golden at the edges.
  3. Pile roast beef onto roll bottoms and top each with 2 slices provolone.
  4. Broil the sandwiches 2 to 3 minutes until cheese melts and starts to brown in spots.
  5. Ladle au jus into small bowls. Plate the sandwiches with the jus on the side and serve right away.

Notes

If you want to use homemade roast beef instead of deli meat, the total time will be much longer. A 2 lb boneless beef roast roasted to medium-rare and sliced thin after resting will give you incredible flavor, but the sandwich itself still comes together in the same short window.
