- Cut a 2 to 3 inch thick round from the center of the watermelon after trimming one end flat. Place it on a serving plate and pat the top and sides completely dry with paper towels.
- In a cold bowl, whip the heavy cream and maple syrup with a hand mixer on medium-high until soft peaks form, about 2 minutes. Stop as soon as the cream holds a curl that droops slightly.
- Frost the top and sides of the watermelon with the whipped cream, using an offset spatula for big swoops. Pile the berries on top and serve right away, or chill up to 30 minutes before slicing.
Notes
This cake is best assembled and enjoyed within a couple of hours. If you need a little extra hold, pop the bare whipped cream cake in the fridge for 20 minutes before adding the berries to let the cream set. For the cleanest slices, use a warm, dry knife and wipe it between cuts.
