Walking Tacos for a Crowd Recipe

Ingredients
  

  • 2 lbs ground beef
  • 1 medium onion, diced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/2 cup water
  • 2 cups shredded iceberg lettuce
  • 1 cup diced fresh tomato
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 12 (1 oz) bags Fritos corn chips

Method
 

  1. Cook ground beef and onion in a large skillet over medium-high heat until browned, about 9 minutes total. Drain fat.
  2. Stir in chili powder, cumin, garlic powder, paprika, oregano, salt, and cayenne. Toast 1 minute, then add water and simmer 5 minutes until thickened.
  3. While meat cooks, prep lettuce, tomato, and cheese. Arrange all toppings in bowls with spoons.
  4. Slit open chip bags, set out the meat pot, and let everyone build their own walking taco.

Notes

The taco meat stays warm in a skillet over the lowest setting for about 30 minutes. For longer parties, transfer it to a slow cooker on WARM and stir in a spoonful of water now and then.
