Walking Taco Casserole Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 packet (1 oz) taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (10 oz) can diced tomatoes with green chiles, undrained
  • 2 cups crushed Fritos corn chips
  • 2 cups shredded sharp cheddar cheese
  • Sour cream, shredded lettuce, diced tomato, and pickled jalapeños for serving

Method
 

  1. Brown the ground beef in a skillet over medium-high heat until no pink remains, about 6 minutes. Drain most of the fat.
  2. Stir in taco seasoning, beans, corn, and diced tomatoes (with juices). Simmer until thickened, 5 to 7 minutes.
  3. Preheat oven to 375°F. Spread crushed Fritos in a 9x13-inch baking dish. Spoon the filling over the chips and top with cheese. Bake until bubbly, about 20 minutes.
  4. Let the casserole sit 2 minutes, then scoop onto plates. Top with sour cream, lettuce, tomato, and jalapeños and serve right away.

Notes

The Fritos will soften as they sit, so serve immediately for the best crunch. If you want extra-crispy texture, sprinkle a handful of fresh crushed Fritos over the top after baking.
