Walking Taco Bake Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 (1 oz) packet taco seasoning
  • 1 (10 oz) can diced tomatoes with green chiles, undrained
  • 1 (14.5 oz) can black beans, drained and rinsed
  • 2 cups shredded sharp cheddar cheese
  • 1 (9.25 oz) bag Fritos corn chips, divided
  • Sour cream, shredded lettuce, diced tomatoes, and sliced green onions for serving

Method
 

  1. Preheat oven to 375°F (190°C). Cook ground beef in a skillet over medium-high heat until no longer pink, about 6 minutes. Drain fat, stir in taco seasoning and tomatoes; simmer 2 minutes.
  2. Spread half of the Fritos in a 9x13-inch baking dish. Top with beef mixture, black beans, and 1 cup cheese.
  3. Add remaining Fritos and remaining 1 cup cheese. Bake 15 to 20 minutes until cheese is bubbly and edges are golden.
  4. Let rest 5 minutes, then top with sour cream, lettuce, tomato, and green onions. Serve hot.

Notes

For extra crunch, serve a bowl of Fritos on the side. The bake is at its best right after adding the cold toppings, so gather everyone at the table before you finish it.
