Method
- Smash cucumbers with a rolling pin or the side of a knife until cracked, then cut into chunks and toss with salt.
- Whisk soy sauce, rice vinegar, sesame oil, sugar, and garlic until the sugar dissolves.
- Drain any water from the cucumbers, add dressing, chili crisp, and sesame seeds, toss to coat, pile onto a plate, and scatter scallions on top.
Notes
The salad tastes even better after a 10-minute rest in the fridge, but dressed cucumbers will soften over time. For the crunchiest texture, serve within an hour.
