Vinegar Coleslaw Recipe

Ingredients
  

  • 1 medium green cabbage (about 2 lb), shredded
  • 1 large carrot, peeled and shredded
  • 1/2 small red onion, very thinly sliced
  • 1/2 cup apple cider vinegar
  • 2 tbsp granulated sugar
  • 1/4 cup neutral vegetable oil
  • 1 tsp celery seed
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper

Method
 

  1. Shred the cabbage to yield about 8 cups. Shred the carrot and thinly slice the onion, then toss them together in a large bowl.
  2. Whisk the vinegar, sugar, oil, celery seed, salt, and pepper in a small bowl until the sugar dissolves.
  3. Pour the dressing over the vegetables and toss until evenly coated. Let the slaw sit at least 15 minutes, then toss once more and serve.

Notes

If you like a softer slaw, make it a few hours ahead and chill it. The cabbage will relax and the flavors will deepen. Give it a good stir just before serving, as some dressing will pool at the bottom.
