- Melt the butter in a large pot over medium heat. Add the onion and cook for 5 minutes until soft. Stir in the garlic and cook 30 seconds.
- Pour in the broth, add the broccoli, and bring to a boil. Lower the heat and simmer for 10 to 12 minutes until fork-tender.
- Reduce heat to low. Stir in the Velveeta and milk until melted and smooth, about 3 to 4 minutes. Season with salt, pepper, and nutmeg.
- Ladle into bowls, top with black pepper or extra cheese if you like, and serve hot.
Notes
If you want extra thickness, you can puree a cup of the cooked broccoli with a little broth before adding the cheese. The soup keeps its best texture when reheated gently and not boiled.
