Vegetarian Taco Bowl Recipe

Ingredients
  

  • 1 cup long-grain white rice
  • 1 lime
  • 2 tbsp olive oil
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 cup corn kernels
  • 1 large tomato, diced
  • ¼ cup finely chopped red onion
  • ½ cup chopped fresh cilantro, divided
  • 1 avocado
  • ½ cup sour cream
  • ½ cup crumbled Cotija cheese or feta (optional)
  • Salt

Method
 

  1. In a saucepan, bring 2 cups water to a boil. Add the rice, lime zest, and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and keep covered.
  2. Stir together the tomato, red onion, half the cilantro, and 1 tablespoon lime juice. Season with salt and let sit 5 minutes.
  3. Heat the oil in a skillet over medium-high. Add beans, corn, cumin, and chili powder. Cook 5 to 6 minutes, stirring occasionally, until beans are hot and corn is lightly charred. Season with salt.
  4. Stir the sour cream with the remaining lime juice and a pinch of salt. Thin with a splash of water if desired.
  5. Spoon rice into bowls. Top with beans, pico de gallo, sliced avocado, crema, remaining cilantro, and cheese. Serve right away.

Notes

If you want extra heat, stir a pinch of cayenne into the beans when you add the spices.
