Vegetarian Sushi Rolls Recipe

Ingredients
  

  • 2 cups sushi rice
  • 1/4 cup rice vinegar
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 4 sheets nori
  • 1 ripe avocado
  • 1 small cucumber
  • 1 medium carrot
  • 1 tbsp toasted sesame seeds
  • Soy sauce, for dipping

Method
 

  1. Rinse rice, cook 18–20 minutes, then fold in vinegar, sugar, and salt while hot. Spread on a sheet pan to cool.
  2. Cut avocado into thin strips, peel and julienne cucumber and carrot into matchsticks.
  3. Place nori shiny side down on a bamboo mat, spread 1/2 cup rice leaving a 1-inch border, add fillings, roll tightly, and rest seam-side down 1 minute.
  4. Slice each roll into 8 pieces with a sharp knife, wipe blade between cuts, and serve with dipping sauce.

Notes

Work with damp hands at all times when touching the rice. If the nori starts to soften and tear, you may have overfilled the roll or let it sit too long before slicing. Let the rice cool fully before rolling, or the nori will steam and get chewy.
