Vegetarian Stuffed Zucchini Boats Recipe

Ingredients
  

  • 4 medium zucchini
  • 1 cup cooked quinoa
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 cup halved cherry tomatoes
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup crumbled feta
  • 1/4 cup chopped fresh dill
  • 1 lemon, zest and juice
  • 2 tbsp olive oil
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper
  • pinch red pepper flakes

Method
 

  1. Preheat the oven to 400°F (200°C). Halve the zucchini lengthwise and scoop out the seedy core, leaving a 1/4-inch border. Brush cut sides with olive oil and place cut side up on a baking sheet.
  2. In a large pan, heat the 2 tbsp oil over medium heat. Cook the onion, garlic, salt, pepper, and red pepper flakes until softened, about 5 minutes. Add the cherry tomatoes and cook another 2-3 minutes until they start to collapse.
  3. In a large bowl, combine the quinoa, chickpeas, cooked vegetables, lemon zest, lemon juice, dill, and half the feta. Stir until evenly mixed, about 1 minute.
  4. Fill the zucchini shells with the mixture, pressing gently. Top with the remaining feta.
  5. Bake for 20-25 minutes until the zucchini is tender and the feta is golden. Let cool 5 minutes, then serve with extra lemon and dill.

Notes

Let the boats rest for 5 minutes after baking to allow any excess liquid to settle. If your zucchini release quite a bit of moisture, you can blot the baking sheet briefly before serving.
