Vegetarian Spring Rolls Recipe

Ingredients
  

  • 8 oz extra-firm tofu
  • 2 oz dried rice vermicelli
  • 6 (8-inch) rice paper wrappers
  • 1 medium carrot
  • 1/2 English cucumber
  • 2 cups shredded lettuce
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup fresh mint leaves
  • 1 tbsp neutral oil
  • 1/4 tsp kosher salt
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce or tamari
  • 1 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup
  • 1/2 tsp sriracha
  • 2 to 3 tbsp warm water

Method
 

  1. Heat oil in a skillet over medium-high heat, add the tofu cubes and salt, and sear until golden on all sides.
  2. Cook the vermicelli according to package directions, drain, rinse with cold water, and set aside to drain completely.
  3. Whisk the peanut butter, soy sauce, lime juice, honey, and sriracha into a smooth paste, then thin with warm water a tablespoon at a time.
  4. Slice the carrot and cucumber into matchsticks, shred the lettuce, and pick the herb leaves.
  5. Dip a rice paper wrapper in warm water for about 5 seconds, lay it on a damp surface, and arrange a portion of lettuce, vegetables, noodles, herbs, and tofu in the lower center.
  6. Fold the bottom edge over the filling, tuck in the sides, and roll tightly. Serve immediately with the peanut sauce.

Notes

These rolls taste best right after rolling, when the wrappers are soft and the vegetables are crisp. If you need to get a head start, assemble them up to 2 hours ahead, wrap each one loosely in a damp paper towel, and store in an airtight container in the refrigerator.
