Vegetarian Burrito Bowl Recipe

Ingredients
  

  • 1 cup long-grain white rice
  • ½ teaspoon salt
  • 2 tablespoons fresh lime juice
  • ¼ cup chopped fresh cilantro, plus more for serving
  • 1 tablespoon olive oil
  • ½ cup finely diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 cup frozen or fresh corn kernels
  • 1 ripe avocado, sliced
  • Sour cream, for topping
  • Salsa, for topping
  • Extra lime wedges, for serving

Method
 

  1. Combine the rice, 2 cups of water, and salt in a saucepan. Bring to a boil, cover, and simmer for 15 minutes. Remove from heat and let sit 5 minutes. Fluff, then stir in lime juice and cilantro.
  2. Heat olive oil in a skillet over medium heat. Cook onion until soft, about 3 minutes. Add garlic, cumin, and chili powder, cooking 30 seconds. Stir in black beans and ¼ cup water. Simmer until saucy, 5 to 7 minutes. Season with salt.
  3. Heat a dry skillet over high heat. Add corn and cook without stirring until charred in spots, 3 to 4 minutes. Shake and cook 1 minute more. Transfer to a plate.
  4. Divide rice among bowls. Top with beans, corn, avocado, a dollop of sour cream, and salsa. Finish with cilantro and a squeeze of lime. Serve right away.

Notes

If you have leftover rice, the meal comes together even faster. For meal prep, keep the warm components separate from the fresh toppings until you are ready to eat.
