Vegetarian Buffalo Chicken Dip Recipe

Ingredients
  

  • 1 medium head cauliflower (about 2 lbs), cut into small florets
  • 2 tbsp olive oil
  • 8 oz cream cheese, softened
  • 1/3 cup buffalo wing sauce
  • 1/4 cup ranch or blue cheese dressing
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup shredded mozzarella
  • 2 green onions, thinly sliced
  • Salt and pepper, to taste

Method
 

  1. Preheat oven to 375°F. Heat olive oil in an oven-safe skillet over medium heat. Sauté cauliflower with salt and pepper for 5 to 7 minutes until just tender. Drain any water and set aside.
  2. Reduce heat to medium-low. In the same skillet, stir cream cheese, buffalo sauce, and ranch dressing for 2 to 3 minutes until smooth and bubbling.
  3. Remove from heat. Fold in the cauliflower and 3/4 cup cheddar until coated.
  4. Top with remaining 1/4 cup cheddar and the mozzarella. Bake for 20 to 25 minutes until bubbly. Broil for 2 to 3 minutes if you want a golden top.
  5. Let cool 5 minutes, sprinkle with green onions, and serve warm from the skillet.

Notes

Let the dip cool for 5 minutes before serving; it’s extremely hot from the oven. For the thickest texture, use full-fat block cream cheese.
