Vegetarian Baked Ziti Recipe

Ingredients
  

  • 1 lb ziti pasta (oven-ready or no-boil)
  • 2 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • 2 garlic cloves, minced
  • 5 oz fresh baby spinach, roughly chopped
  • 1 (24 oz) jar marinara sauce
  • 1 cup water
  • 15 oz whole-milk ricotta
  • 1 large egg
  • 1/2 tsp kosher salt
  • Freshly ground black pepper, to taste
  • 2 cups shredded low-moisture mozzarella
  • 1/2 cup grated Parmesan

Method
 

  1. Preheat oven to 400°F (200°C). In a skillet over medium-high heat, sauté mushrooms in olive oil until golden, about 5 minutes. Add garlic and cook 30 seconds, then wilt spinach. Remove from heat.
  2. Mix ricotta, egg, 1/4 cup Parmesan, salt, and pepper until smooth.
  3. In a 9x13-inch baking dish, combine pasta, marinara, water, and the mushroom mixture. Layer half the ricotta dollops and 1 cup mozzarella. Repeat with remaining ricotta, then top with remaining mozzarella and Parmesan.
  4. Cover with foil and bake 20 minutes. Broil 1 to 2 minutes if a golden top is desired. Rest 5 minutes, then scoop and serve.

Notes

Let the baked ziti sit for those 5 minutes before serving, the layers will set up and slice more cleanly. If you use standard pasta, boil it for half the package time, drain, and skip the cup of water in the assembly step.
