Vegan Tzatziki Sauce Recipe

Ingredients
  

  • 1 cup thick plant-based yogurt
  • 1 medium cucumber (about 8 oz)
  • 2 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp finely chopped fresh dill
  • 1 tbsp finely chopped fresh mint (optional)
  • ½ tsp fine sea salt
  • Freshly ground black pepper
  • Extra virgin olive oil, for drizzling
  • Pinch of sumac or extra dill, for garnish

Method
 

  1. Grate the cucumber on the large holes of a box grater. Wrap the shreds in a clean kitchen towel and squeeze firmly until you have about ½ cup of dry cucumber.
  2. In a bowl, whisk the yogurt, garlic, lemon juice, dill, mint (if using), salt, and pepper until smooth.
  3. Fold in the cucumber, then cover and refrigerate for at least 15 minutes. Serve in a bowl drizzled with olive oil and topped with sumac or dill.

Notes

English cucumbers need no peeling, but thick-skinned ones do. This sauce tastes best after a short rest, so make it ahead if you can.
