Method
- Heat oven to 350°F (175°C) and line an 8-inch square pan with parchment.
- Whisk sweet potato puree, oil, sugar, and vanilla until smooth.
- Sift flour, cocoa powder, baking powder, baking soda, and salt into a separate bowl.
- Fold wet ingredients into the dry ingredients until just combined, then fold in chocolate chips.
- Spread batter into the pan, top with extra chips, and bake 25 to 28 minutes until a toothpick has moist crumbs.
- Cool in the pan 20 minutes, then lift out and slice into 9 squares.
Notes
Make sure your sweet potato puree is completely cooled before mixing so you do not melt the chocolate chips. These brownies taste even better the next day after the flavors meld.
