Vegan Stuffed Mushrooms Recipe

Ingredients
  

  • 16 cremini mushrooms (about 1 lb)
  • 2 tbsp olive oil, plus more for the sheet
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup panko breadcrumbs
  • 3 tbsp nutritional yeast
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp melted vegan butter
  • Fresh parsley, chopped (optional)

Method
 

  1. Preheat oven to 400°F (200°C) and lightly oil a baking sheet. Wipe mushrooms clean, remove stems, and finely chop the stems.
  2. Heat 2 tbsp olive oil in a skillet over medium heat. Cook the onion and chopped stems for 5 minutes, then add the garlic for 30 seconds. Off heat, stir in the panko, nutritional yeast, thyme, salt, and pepper.
  3. Arrange mushroom caps on the baking sheet. Spoon the filling into each, packing gently and mounding it above the rim. Brush the tops with the 2 tbsp melted vegan butter.
  4. Bake for 18 to 20 minutes until the tops are golden and crisp. Let cool briefly, transfer to a platter, garnish with parsley if using, and serve hot.

Notes

For the best texture, serve these straight from the oven. If you stuff them ahead, keep the filled mushrooms covered in the fridge and bake them right before you are ready to eat.
